Large language models have transformed unstructured document processing. Feeding the OCR output of a contract into GPT-4 or Claude with a structured extraction prompt can pull out dozens of relevant fields in a single API call. The key is validation: use the model’s output as a draft that human reviewers confirm, and track accuracy metrics to know when the model can be trusted to operate without review.

Version your extraction models and maintain the ability to reprocess historical documents when models improve.
